I managed to harvest two ice-cream tubs worth of baby green figs a couple days ago and would like to harvest the rest, before the birds get them! Here goes another recipe for baby green fig preserve. I love the taste as it remind me of christmas, and the fig preserve goes well almost anything, such as icecream, peanut butter, smoked ham, cheese…..
This year I cleaned and then halved them. Make sure you clean of the white fluid that initially comes out the ripe fig as this can be an irritant to the skin and eyes and is quite bitter to taste ( yes I tasted it ).
I added just under 1 kilogram of brown sugar to two litres of boiling water on the stove. I then added two tablespoons of cinnamon and nutmeg. I also threw in a two teaspoons of aniseed for more flavour.
Today while I am writing at home I am going to boil for an hour and then let it cool down and settle and then simmer for a couple more hours. Hopefully this year is the best fig year yet.
